Roasted Peach Lemonade
Roast 3 peeled peaches in the oven. Squeeze 5 lemons into a blender. Add peaches. Blend and strain. Add simple syrup and water to taste

Beef Wellington
I have posted the recipe for the beef wellington in the Evernote recipe folder. It should be noted I sort of bounced around 2 recipes and 1 video. I used a combination of Tyler Florence and Gordon Ramsay's recipes.

As a side note, I have heard from a colleague of mine that he does the same basic recipe but substitutes a pork tenderloin but I didn't want to throw down with the pork expertise that is in the room.

European White Wine
Team N started the evening with French/American Chardonnay and Raspberry Risotto
Team K continued with Italian Chardonnay and Bacon Wrapped Cilantro Chicken
Team BJ ended the meal with French Dessert Wine and a Fruit and Cheese Board
neither of which i have a picture of but it was super delicious
January's Best of
Our "best of" tasting was super fun and we are happy to support the tradition for next year.
Slight modifications were made to original recipes, which made it even more fun:
Team BJ made their own cornmeal sage dough for the empanadas and also presented a cup with Buffalo Stew Meat Goat Cheese and Cilantro. They also made the Watermelon Margaritas with Sotol in honor of John's recent run in Bandera.
Team K cooked their pork on the grill instead of the oven.
Team N didn't change the carnitas recipe, we did serve with Bluecorn and Flaxseed Tortillas, Cotija Cheese and Cilantro. We didn't find any of the Sakes that Jonathan brought to the sake tasting so we just brought a sake to represent...
Richard brought a bottle of Baker's and Paul showed up with a bottle of Bain's, that South African Whiskey that was ordered online, and left it for John as a congratulatory gift.
